Ultimately, what is Bingsoo?🍨
Bingsoo or Patbingsoo is a popular Korean dessert that is primarily made with shaved ice and topped with a variety of sweet ingredients. However, Bingsoo can also be made with a mixture of condensed milk and milk, as demonstrated in Sue Pressey of My Korean Kitchen's 'Korean Milk Ice Sorbet (Injeolmi)' recipe (Sue Pressey - My Korean Kitchen, 2019).
At cafés, this frozen milk mixture is usually finely dispensed through a machine. The Bingsoo that is made with a frozen milk mixture definitely exhibits a more creamier texture and sweeter flavour.
The mountain of ice (or milk mixture) is then topped with red beans, cereal (cornflakes), almonds, mochi (chewy rice cake) and served/topped with condensed milk to sweeten the delightful dessert.

Bingsoo comes in many flavours including:
- Original (Patbingsoo)
- Matcha (Green Tea)
- Injeolmi (Soybean)
- Oreo
- Chocolate
- Tiramisu
- Mango
- Strawberry
- Melon
- Taro
- Thai Milk Tea
- Vietnamese Iced Coffee
- Pandan and Coconut
In the recent years, there has been an adaptation of this decadent dessert in some iconic Chinese, Thai, and Vietnamese flavours. For example, there are some cafés that serve Vietnamese Iced Coffee Bingsoo, Taro Bingsoo, Thai Milk Tea Bingsoo and even Pandan and Coconut Bingsoo.
